An Overnight Date: The Setup (a story being written live)
He wanted to bake bread with me. Gluten intolerant, fermented beverage, and ferment food nerd.
He told me straight up “We’re not using any substitute ingredients. We’re following what they say to do.”
“The they’s no one ever has met.” I giggled.
“Take this seriously. This is my first time and I want to do it right.”
He spoke to me as if we were virgins stepping into uncharted waters for the first time. He researched his ass off. I bought him the mixer. He set the date and the terms. Now we dive in hoping to birth something as beautiful as our children. Just as delicately and deliberately sans the blue label whiskey.
The internet was scraped. Our West Indian cookbook was consulted. We did not speak with our mother’s nor did we consult the ancestors. He wanted to do this his, correction, our way. This project was nobody’s business but our own. Even the children were kicked out of the kitchen. Something he never does as cooking is loaded with homeschool lessons and opportunities to learn math, chemistry science, and communication skills.
We’re starting with focaccia while getting a sourdough starter incubated. He has to multitask it’s an addiction we share. 1 cup of flour. 1 cup of water. Stir in a mason jar. Cover with a coffee filter and rubber band. Set in our indoor fermentation counter.
I review the instructions he has settled on. 2-hour first rest. 5-minute yeast rest. 2–3-hour second rest? 10-minute stretch and spring inspection? Chill 24 hours! Third rest, next day, 65 minutes in a warm space until it’s bubbling like a being coming to life. Bake 35 minutes.
My goodness! This isn’t gonna be a quick project. This is going to require us to pull an all-nighter! Have you ever been on a date that just wouldn’t end? A date that lasted well into the night; picked up and continued where you left off in the morning?
We’re committing to it. We’re co-creating and birthing something new together. Will it bring us closer together or tear us apart?
